Life Flower by Nicolas Nikolakopoulos

A bar with an exclusive design that evokes the creative force of the Life Flower, symbol of prosperity and vitality. With this mould, Martellato adds a round shape to its line of bars, opting for a wrap-around style that favours aesthetics and consequently makes tasting the chocolate bars more inviting.

"Vanilla & Roseberry bar"

Recipe by Nicolas Nikolakopoulos



Vanilla Ganache


Ingredients:

Cream 120 g

Glucose 22.5 g

Dextrose 22.5 g

Sorbitol 34 g

White chocolate 255 g

Butter 37.5 g

Vanilla beans 1 piece g


Procedure:

Boil cream, vanilla beans scraped and all the sugars. Add in chocolate and butter and emulsify. Use at 28° C.


Roseberry gel


Ingredients:

Strawberry puree 250

Lemon Juice 10

Rose petals, choped 6

Sugar 18

Yellow pectin 3.6

Sugar 160

Glucose 82

Citric acid solution 50% 8


Procedure:

Boil everything except citric acid solution together until 103°C. Remove from heat and add acid, and let it cool down completely.

ABOUT Nikolas Nikolakopoulos:


Nicolas is Greek Chocolate Master 2022 and placed 3rd at the World Chocolate Masters.


Throughout his career, he has gained valuable experience in various hospitality establishments.


He is a professor at Le Monde Institute of Tourism Studies in Athens, where his journey began. He gives consultancy and master classes all over the world. He is also pastry chef at NZ Dessert Designers.
